Lemon Cupcakes

There is no better way to add sunshine to your day then by whipping up a batch of these tangy lemon cupcakes. I wanted to find something to use the limoncello lemon curd I made in the previous recipe and decided on lemon cupcakes.

Ingredients for the cupcakes:

1 1/4 cups cake flour

1 3/4 teaspoons baking powder

1/4 teaspoon salt

3/4 cup butter (room temperature)

3/4 cup plus 3 tablespoons sugar

3 eggs (separated)

1/3 cup milk

1 tablespoon lemon curd (I used my limoncello lemon curd found here)

Pinch of cream of tartar

Ingredients for the frosting:

2 sticks butter (softened)

3 cups confectioners sugar

4 tblsp mascarpone cheese

1/3 cup fresh squeezed lemon juice

Directions:

Preheat oven to 350 degrees F. Place cupcake liners in cupcake pan (batter will make about 18 cupcakes).

To make the cupcakes, sift together flour, baking powder, and salt. Whisk to combine. Cream the butter and 3/4 cup sugar using a stand mixer with paddle attachment. After the butter softens, switch to a whisk and whisk for 5 minutes. Whisk in the egg yolks one by one. Then add in the milk and the lemon curd. Once combined, whisk in the flour mixture 1/3 at a time.

In a separate bowl, use the standing mixer with the balloon whisk attachment and whisk the egg whites with the cream of tartar. Whisk until soft peaks form. Add in the remaning sugar and whisk for an additional 2 minutes. Whisk one-fourth of the egg white mixture into the butter mixture. Then using a rubber spatula, fold in the rest.

Fill the cupcake pans and bake for 25-28 minutes or until a toothpick inserted in the middle of a cupcake comes out clean. Let cool on wire racks.

To make the frosting, beat the softened butter in a standing mixer using the paddle attachment. Beat for about 2 minutes (scrape down paddle attachment occasionally as the butter will stick). Then sift in 2.5 cups of the confectioners sugar. Beat on medium speed for about 7-8 minutes, the mixture should be completely smooth. Add in the lemon juice and mascarpone cheese. Beat again until combined and then add in the remaining confectioners sugar and beat for another 5 minutes.

Top the cupcakes with the frosting, decorate as desired.
