Pistachio Chicken Burgers

In honor of National Pistachio Day, we are incorporating pistachios into one of America’s all-time favorites: the burger. We are not making just a classic American Burger however, we are making a burger with ingredients that pair best with pistachios. The pistachios in this recipe are quite prominent, we want this distinct flavor to shine since it is National Pistachio Day after all! The chicken burger is paired with a rosemary goat cheese spread and placed on top of a lightly toasted brioche bun.

Ingredients for chicken burger:

1 lb. chicken meat (ground)

1/2 tsp. kosher salt

1/4 tsp black pepper

1/2 tsp dried rosemary

1/2 tsp garlic powder

dash of paprika

dash of onion powder

1/4 cup low fat milk

1/8 cup bread crumbs (plus more for coating chicken)

1/2 cup pistachios (ground)

4 brioche buns

Ingredients for spread:

1/4 cup pistachios (ground)

4 oz. goat cheese

3 tsps. heavy cream

1/4 tsp dried rosemary

Directions:

Preheat oven to 350 degrees F and prepare a small baking tray with parchment paper.

To make the burgers, combine in a medium size bowl the ground chicken meat, salt, pepper, rosemary, garlic, paprika, and onion powder. Using your hands mix all ingredients until well combined. Then add in milk, breadcrumbs, and pistachios. Mix again until all ingredients are combined. Split the mixture into 4 even portions and form 1/4 lb. burger patties. On a small plate, spread the extra bread crumbs. Place the patties in the bread crumbs coating both sides of the burger. Place pan on medium heat and drizzle with olive oil or non-cook spray. Sear patties for approximately 5 minutes on each side or until brown.

To make the spread, combine the pistachios and goat cheese in a medium size bowl using a rubber spatula. Fold in the rosemary and heavy cream. Mix until well incorporated.

Once the burgers are cooked through on the stove, place the patties on the prepared baking tray. Top each burger with a desired amount of the spread. Place the brioche buns on a separate tray and place both the burger tray and bun tray in the oven for 5 minutes. Remove and garnish with tomato and lettuce if desired. Serves 4.
