Sweet Potato Tater Tots

Tater tots serve as a great snack. This easy to eat finger food can be served up with breakfast or as a light snack during the afternoon. These tots are made of sweet potato and have a light note of cinnamon.

Ingredients for Tater Tots:

Vegetable oil for frying

1 large sweet potato

1 tsp salt

1 large egg

2/3 cup all purpose flour

1/2 tsp. cinnamon

1/4 tsp. light brown sugar

1/8 tsp. nutmeg

Ingredients for Cinnamon Cream Cheese Dipping Sauce:

4 oz. cream cheese

1 tbs. heavy cream

1/4 tsp. honey

Dash of cinnamon

To make the tater tots, fill a 3 inch deep sauce pan with vegetable oil (until about halfway up the pan). Heat until 350 degrees F.

Wash and peel the sweet potato. Using a box grater, finely shred the sweet potato into a medium size bowl. Add the salt and combine using your hands. Transfer mixture to a towel and squeeze out all the liquid. You make need to repeat this a few times switching out the towel in order to get as much moisture out as possible (I use paper towels and will go through the process about 5 times).

Return sweet potato back to bowl. In a separate bowl, beat one egg. Add egg to sweet potato bowl and combine. Add in flour and stir to combine. Add in cinnamon, brown sugar, and nutmeg, stir to combine. Once the oil is heated to 350 degree F, using your hands, form the mixture into balls or tator tot shapes and drop into the oil. Cook each tater tot for about 4-5 minutes. Use tongs to flip the tots over while in the oil. Once cooked, remove from oil and place on a paper towel lined plate.

To make the dipping sauce, bring a pot of water to a simmer. place a metal bowl on top of the pot so that the bottom of the bowl barely skims the simmering water. Cut the cream cheese into cubes and place in bowl. Add in heavy cream. Use a rubber spatula to combine the cream cheese and cream. Allow the cream cheese to soften and begin to melt. Add in honey and cinnamon. Continue to stir with rubber spatula until all of the cream cheese has melted into a consistence texture. Transfer from metal bowl into a small serving bowl.
